THE BEST BANANA OAT PANCAKES RECIPE, BECAUSE YOU ASKED FOR IT!

I have been making these healthy pancakes for about a year and a half, but I feel like its only recently that I am starting to “perfect” my own recipe.
I have posted them on Instagram a few times and due to the huge amount of messages and comments asking me to share the recipe, I decided to share it here!. Its super easy and quick to make them, but the best part is that they are a healthy alternative to regular pancakes.

In terms of ingredients, it obviously depends on how many you make, but I normally make for me and my boyfriend, so 4 small ones in total and the portions are roughly for that -you can always add more to make more-.

1 Banana.
4 to 5 table spoons of oatmeal (I noticed that it works best with the thinner oats, as they absorb the moist quicker.
4 to 5 table spoons of Self-rising flour (I started adding these for about two months. It gives the pancakes a fluffier consistency. When you use the banana alone, they tend to be heavier)
1 Egg.
1 tea spoon of cinnamon.
1 table spoon of coconut sugar / or brown sugar.
Chocolate chips (If you feel like indulging yourself! :P)
a splash of milk (I use soya milk).
Blueberries to top your pancakes.
Syrup (Its a matter of preference. I bought ginger syrup and it tastes amazing!

HOW TO:

First thing I do is mash 1 banana inside a large bowl, then add 4 to 5 tablespoons of oatmeal, crack an egg, add the cinnamon & sugar and mix. Once you mix these ingredients, start adding the table spoons of self-rising flour one by one and mix everything together. At this point, you can get a pretty good idea if the mixture is too thick or too runny. If the mixture is too thick, add a splash of milk and if the mixture is too runny, add a bit more flour.

Once the mixture is ready, I sometimes let it rest in the fridge for about 15 minutes, but you can also cook it immediately. Pour the mixture in the hot pan and voila!

    Do you think that I can cook it the night before and store it into the fridge?

    1. I tried that and its possible! the only issue is that the banana browns a little overnight in the fridge, but if you dont mind that, then its ok!, you might need to add a tad more milk just to make sure that the mix didn’t dry out overnight!

  5. So funny- same wavelength! I perfected my protein blueberry pancakes and now my husband wants it every single Sunday for breakfast! it’s become a staple & tradition! Will have to try your recipe out soon though, It sounds YUM! :)

  6. Yes!!! I do them like that with a small variation. I have replaced oats and self raising flour with oat flour and a dash of baking powder . (I wanted to skip the wheat flour and still have a fluffy result and that did the trick!!)
